See if you can plan a large family dinner at least one Sunday a month. This can be a wonderful tradition that you can share with your partner and children. A monthly special event where everyone helps cook and then everyone gets to eat together. No phones, tablets, or TV allowed.Make your first meal a simple one. Get a nice roast of BC porkfor your fist Sunday family meal. It doesn’t need a lot of fiddling with, it cooksquickly and it is delicious.
You will need:
• 3lb BC Pork Picnic Roast
• 6 large russet potatoes
• One jar of no sugar added apple sauce
• One bag of organic frozen peas
• Salt and Pepper
• Olive oil
That’s it. That is all you will need to attempt your first family roast dinner. If you feel bold enough, you can attempt to make your own apple sauce and if you know a good place that has in season peasthen, by all means, go fresh. However, if you feel that you just want keep this first one simple, get the jar of apple sauce and the frozen peas. Get the highest quality you can find, because we still want to eat well.
What to do:
Preheat your oven to 400˚ F. Place the BC Pork picnic roast on a roasting tray. If you have a roasting rack to go with it, even better. Cut thin slits into the fat of the roast and rub the entire roast with good quality olive oil.Season generously with salt and pepper. As soon as you put the roast in the oven, reduce the heat to 250˚. Then cook until the internal temperature of the roast reaches 150˚. If you got a 3lb roast, it should take about 3 hours. Just before the roast is done, all you need to do is boil the potatoes, drain them and mash them. Season with salt and pepper and make sure to heat the peas through in boiling salted water and drain. If you want to, you can mix a pat of butter in with the peas. You can serve the apple sauce warm or cold. It is as simple as that.
